I'm looking for software that using virtualization (VMWare / Hyper-V) to create various testing env. and deploy software on to it to test how do the software perform under those enviornments. Anyone know any product that does this?

Coming to opensource I am not sure if there is any but I am sure Surgient product should solve your problems

Both Vmware and Hyper V can have systems with software installed.

If you are looking for a free solution Xen server might be the way to go. Are you looking to emulate network conditions? Just software performance on a single system? Testing SW on multiple OS versions for compatibility?

The answer will vary depending on the type of testing you want to do. If you are looking for -A small setup testing 4-5 OS versions just use ESXi/Hyper V and you should be fine. -A medium setup testing SW on multiple OS but you require 25-250 Vm's Xen server might be the way to go. -Large scale 250+ VM's with complex networking setup (unsure as I am not familiar with it)
