I just downloaded Gorm and Project Center from GNUstep so I could develop for iOS (I know about Xcode, but want to start with this since I am using Windows), and find them immensely confusing. Can anyone point me towards some good beginning tutorials for Gorm and Project Center for developing in iOS?

GNUstep won't help you develop for iOS; it might help you learn Objective-C and some of the Cocoa API idioms, but there's no path for actually building iOS apps with it. Windows support for GNUstep GUI apps has also lagged behind the Linux versions, so I don't think it'll be easy for you in any event. If you google something like develop iOS without Mac you can find some pointers, but AFAIK Apple won't accept apps not submitted from a Mac. –  echristopherson Aug 8 '12 at 20:45
