SERVER=localhost:3000 coffee -o src/ coffee/

sample.coffee

$.post "ENV.SERVER", data

sample.js

$.post("localhost:3000", data);

Notes and ideas are welcome, though I could do it like this:

source.replace("ENV.SERVER","localhost:3000");
