ALl the docs you needs are available at Apple iPhone developer website. However, you have to register and subscribe as a developer. Basically :

Through the App Store (costs 99$), but you can also distribute through Cydia, the jailbroken app store, for free, by hosting your apps in one of the more popular cydia repositories. |

Apple has some excellent documentation on the subject, available here. You may need to be registered as a developer and/or pay a fee in order to access it, though, and you'll certainly need to pay the fee in order to distribute apps. |

Another method, Ad Hoc, that essentially lets developers beta test apps.
