I like to detect any iOS version, any iDevice (iPhone 4; iPhone 3G…) whith code in Xcode and maby the UDID of the device and then import it into one UILable. Is this possible?

Yes. Firstly search stack overflow there are plenty of answers to this question. Secondly read the documentation. https://developer.apple.com/library/ios/navigation/

Try add this code line:

NSLog(@"Device name: %@", [UIDevice currentDevice].name);
NSLog(@"Device model: %@", [UIDevice currentDevice].model);
NSLog(@"Device iOS version: %@", [UIDevice currentDevice].systemVersion);

NSLog(@"Device Platform: %@", [UIDevice currentDevice].platformType);
NSLog(@"Device Platform String: %@", [UIDevice currentDevice].platformString);
