I host minecraft servers for me and my friends but we like playing on different ones. e.g, survival server, creative server, tekkit server. And this all requires a different screen (in ubuntu) and the default port for minecraft is 25565. So that means if i try to turn on two servers at once ill get an error because the port is already in use. I know I can switch the port so that my friends can join the server like this "matt-ray.com:25566" or "matt-ray.com:25567". Yes I can do this and it will be fine but I much rather have it like this "survival.matt-ray.com" and "tekkit.matt-ray.com" because that is easier to remember. BUT.. theres another problem. both of those urls still point to "22.214.171.124" which will still create an error. How do I make it so that "survival.matt-ray.com" points to one server while "tekkit.matt-ray.com" points to another?

You need to update the DNS records (add new A records) for that domain. It would be in the same place you did the original pointing of matt-ray.com to your server. This is typically your registrar (GoDaddy, NetSol, etc) but can be hosted elsewhere also.
Once that is done you would have to setup multiple instances of your server on Ubuntu running on different IP addresses and have those IP addresses bound to the network interface in Ubuntu so it would know to listen on them.
