I want to setup OpenSSH so that it will detect if an incoming connection is being directed to the server IP or if it is coming from a (sub)domain and default to a different directory accordingly. An example of this would be Apache's <VirtualHost> that can direct traffic to different locations on the server based on which (sub)domain a request is coming in on. Is this sort of setup possible?

Virtual hosts support is a feature of the protocol. HTTP supports is, SSH doesn't. The only way you can do that is to use a different IP addresses and a SSH daemon listening on it for every domain. –  salva Oct 29 '12 at 8:51
