I would love to know the underlying data structure set that drives a game that needs to move forward as quickly and decisively as FIFA (the foootball/soccer game franchise).

I did some research, and as it turns out, there are direction and position based data structures called R-Trees which are used in positioning based games such as the FIFA series.

I'll edit this answer as I find more.

Extremely complicated ones I would imagine. Since each player has a different running style, different appearance, different attributes they must keep a very large and efficient database that is quick to check when rendering each player. EA is a big company that definitely has lots of people working full time to develop these very complicated games like FIFA.
