I have read the documentation of GA, but something is still not clear. When doing a SEO should I use my GA account for my customers' sites or should a new account be created for every site? Does having multiple sites under one account has any benefits/drawbacks?

Use your Google account but create a new tracking account in Google Analytics per client. Ie don't just create a new profile but a new account.
This is so you can keep all your clients separate and give them full access to their own data.
It also makes it easier to transfer ownership if required.
They will still be accessable with your one Google account in Google Analytics.
It's very confusing that GA is an account that contains accounts!
