If I wanted to, for example, remove all the leaves from a tree, how do I go through the tree to find the leaves? Probably, have to use recursion, right?

Yes, since a tree often has a recursive definition it would be natural to express your algorithm recursively. This in fact is one reason why recursion in a programming language is so very valuable - it allows one to express algorithms in the problem domain. Example:
