So, essentially, when the cube is in it's default position, it looks exactly as it should. if i change the Z position to be anything other than 1f or 0f, it becomes invisible. Please help me to understand and fix this.

When you initialize OpenGL you need to add a few lines:

GL11.glLoadIdentity();
GLU.gluPerspective(45.0f, window.getWidth() / window.getHeight(), 0.1f, 100.0f);
GL11.glMatrixMode(GL11.GL_MODELVIEW);
GL11.glLoadIdentity();

The last two arguments are the minimum and the maximum view distance, so instead of stopping at 1 it'll be able to see up to 100 units away.

If you get an error about not having GLU, make sure that you have lwjgl_util.jar in your build path.
