Which is the most secure cloud hosting right now? I am talking of something like Heroku, Rackspace, AWS, Firehost.

The application will be built in Java or Ruby most likely. Other than that I have no restrictions.

Google appengine is going to be the most restrictive and secure because they don't only provide a server, but they provide the whole stack.

I think better than the big players, before you commit something with them (you know moving again to other platform is messy), check out Jelastic. This is a new player in the area and their hosting services offer Java and PHP. Easy to install and very good friendly UI to customize and play around. It is indeed a Linux hosting and hence secured well for your requirements.

Let me know after you check it out as I recently moved to their platform for my start up and research oriented work and find it to be super easy.
