why does the remainder of dividing the smallest number determines the most significant bit in binary and vice verse? I know it obviously work and I can feel that it make sense to me, yet I can't come up with a mathematical proof of why that is.

It's only the 'smallest' number because it's the part that survived all the preceding divisions.

Try changing the algorithm to convert the number to base 10 by dividing by ten at each stage. Perhaps then it will be clearer how that works.
