What are some good resources for grokking the uses and theories behind data mining?

There's an excellent Google Tech Talk called The Statistical Aspects of Data Mining, which I followed. Even bought the book associated with it!

Data mining includes a lot of areas, eg machine learning, algorithms, information retrieval, natural language processing

You should check the book "Introduction to Data Mining" by Tan & Kumar. It gives a very good introduction to data mining that is easy to understand. There is three free chapters on the book website.

After that you may check other books such as the one by Han & Kamber that is more like an encyclopedia of data mining. It is harder to read but cover more advanced topics.
