I have a subscription signup (MailChimp) that I've embedded using a regular ol' form on my site, and basically I need to grab the user's submitted email address and pass it through as a JavaScript variable on the thank you page.

Can anyone help walk me through this?

You can use cookies to do it. Store email in a cookie and receive it back on any page you want. –  Ali Rashidi Dec 26 '13 at 21:34
