I have a Rails 4 application that is receiving JSON posts from a mobile application. Whenever the JSON push contains a symbol, such as £, the application fails to store the JSON data and shows the following error:

I have checked that the column
messageBody is set to UTF-8 for encoding and utf8_unicode_ci for collation.
I have also added
#coding: utf-8 to the beginning of the controller that contains the method in which the JSON post is processed.
Is there a way of allowing symbols to such as £ to be stored in a MySQL TEXT column?
If it helps, here is the method that receives the JSON post:
Message.create(:account_id => email_payload['account'], :imei => email_payload['imei'], :otherParty => email_payload['otherParty'], :messageBody => email_payload['messageBody'], :action => email_payload['action'], :direction => email_payload['type'])
