Here's the code I am using to gather the categories from my Magento Catalog:

$category_helper = Mage::helper("catalog/category");
                                $category_model = Mage::getModel("catalog/category");
                                $_categories = $category_helper->getStoreCategories();
                                $total = count($_categories->getNodes());
                                if($total > 0) {
                                foreach($_categories as $_category) {

When adding new products, if a product category is selected, I want for all other products category checkbox to be disabled, and if unchecked back to enabled. Does anyone have any idea on how to get this done?
