I have an Web Role, just running locally using the Azure emulator. I tried to enable diagnostics like so:

web.config:

 <system.diagnostics>
    <trace>
      <listeners>
        <add type="Microsoft.WindowsAzure.Diagnostics.DiagnosticMonitorTraceListener, Microsoft.WindowsAzure.Diagnostics, Version=2.2.0.0, Culture=neutral, PublicKeyToken=31bf3856ad364e35" name="AzureDiagnostics">
            <filter type="" />
        </add>
      </listeners>
    </trace>
  </system.diagnostics>

In the role configurations settings dialog, I have checked Enable Diagnostics, and set the storage account credentials to UseDevelopmentStorage=true

Is there more to it than this? My previously working web role is broken, and all I get in the browser is single line saying "The page cannot be displayed because an internal server error has occurred."

Are you using a debug build configuration? Also turning on logging won't capture the exception unless you are capturing it and logging it. I think you want to enable exception details to be shown in your web.config. –  CodeForFun Nov 20 '14 at 16:44
