Leechblock -- this flexible site-blocker lets me lock down my browser so that I don't waste too much time on sites like /. and SO. :) Seriously, it's been the single best extension for Firefox to help boost my development productivity.

Firebug first and foremost, but Web Developer is very useful too. My favorite part about Firebug is that you can find out what you need to fix things without constantly making a tiny change to your source code and refreshing the page. You can change pretty much anything as far as I've seen and it makes things a thousand times less frustrating.

YSlow -- which is technically a FireBug add-on, but it shouldn't be left out.

Fireshot lets you take screen shots, including a mode that grabs the whole page- even if part of it has scrolled below the page.

Live HTTP Headers is also good- it lets you see exactly whats going out over the wire.

That's a no-brainer. FireBug all the way. Lets you quickly and easily see what's going on with your HTML, Javascript, CSS, load times, etc. Truly a joy to use and an essential part of any web developer's toolkit.
