I see a lot of such sites,but don't know which open source projects are they based on?

I can't tell exactly, but it sort of looks like Magento. I say that because the product listing has similar sorting options.

But then looking further, all the site's assets are not in the typical folders they would be if it were Magento. So that may seem less likely it is Magento.

How did you assume it is based off an open source project? It could be based of a commercial package, or bespoke (probably unlikely, given the wheel exists, albeit bloated :P).
