You should use parameters when passing values into prepared statements. But, if not, dates needs to be surrounded by single quotes. So, instead of:

SET @item1inv = CONCAT('UPDATE running_inventory SET `', item1_id, '` = `', item1_id, '` - ', item1_qty, ' WHERE date = ', invdate);

It should be:

SET @item1inv = CONCAT('UPDATE running_inventory SET `', item1_id, '` = `', item1_id, '` - ', item1_qty, ' WHERE date = ''', invdate, '''');
