done() is invoked only once, when SwingWorker thread is finished, you should update your label from doInBackground() call. One of possible ways is to implement PropertyChangeListener interface like this:

SwingWorker comes with publish() and process() methods, which you can override to do exactly the same, what you are achieving through propertyChange(). –  Kintaro Dec 16 '10 at 10:53

I usually track SwingWorker.StateValue to prepare/finalize ui (thus need listener anyway); one of positive sides is that ui update code is held in one place and you get "progress" for free :) –  barti_ddu Dec 16 '10 at 11:22

@wizztjh: certainly, you can invoke runnable from within your thread (using SwingUtilities.invokeLater(), for instance), but it has slightly different logic: in this case you simply put UI update task in AWT queue and it will be deferred until all other pending tasks are comleted, so you can't reliably predict when your update will be painted actually (but this may be not an issue in many cases). –  barti_ddu Dec 20 '10 at 8:30

You need to override process() method of SwingWorker, if you want to process intermediate results from the doInBackground() method. You can publish intermediate results by calling the publish() method from doInBackground().

The official tutorial explains this quite well.

You'd better use Swing's Timer to poll your sensor in intervals (or Timer + SwingWorker if getSensor() may take some time); you'll find an example here: download.oracle.com/javase/tutorial/uiswing/misc/timer.html –  barti_ddu Dec 20 '10 at 8:42
