I've been using AddThis.com on my site for a little while now because its nice to only have to include some JS and all of a sudden your site is "social" i.e. one-click posts of my url to FaceBook and alike. However I did not (should have though) pay attention to their privacy policy stating:

Non-Personally Identifiable Information - We collect Non-Personally Identifiable Information automatically when you visit our Site. Non-Personally Identifiable Information is information that is not used nor intended to be used to personally identify an individual and is not associated with nor linked to Personal Information. This Non-Personally Identifiable Information we collect via the Site includes your Internet Protocol address, browser type, browser language, the date and time of your request, and the web page you have visited immediately prior to visiting the Site.

I would love it if someone could suggest a similar plug-in which does not keep such information such as the Referrer / IP etc as I too try not to keep this information on my site.

Your web server logs will contain most of this information. Is it reasonable to ask others to not log this kind of stuff too? I, for one, like having a record of what IP addresses have initiated what requests so that if somebody compromises the server I have evidence. –  cdhowie Jan 5 '11 at 22:17
