Can any one please suggest me some projects or related software which can help a person who has just finished undergrad operating system course?

I want him to write some simple operating system framework from scratch or some of parts of already existing simple OS.

I came through "Pintos" instructional OS which can be run on simulator for x86 machine, so will it be good if he is assigned some projects on it?

Please suggest if there are better options.
The main goal is to do some practical work so that OS concepts are applied there to get better understanding.
