I have this piece of html:

<p><strong>Name:</strong> Lorem ipsum dolor sit amet</p>

I want to wrap a span around the text so it becomes:

<p><strong>Name:</strong> <span>Lorem ipsum dolor sit amet</span></p>

But how do I do this?

You can use contents along with filter. Try this:

$(function(){
        $('p').contents().filter(function() {
          return this.nodeType == 3;
        }).wrap('<span></span>');
 });
