As a documenation need, is there any tool/framework/whatever thing that lets write documentation in a centralized form (xml ?) that allow to publish it in different formats :

  • pdf,
  • html,
  • txt

but that can be tagged to let choose information that shouldn't be public.

Why ? because if I want to publish all data from the centralized file : I choose publish all, and if I want to avoid to publish some of the data -sensitive ones for ex- I choose publish public only

Apart Latex is there something else ?

There's also markdown. See http://superuser.com/questions/14071/to-use-markdown-as-latexs-substitute. Try also pandoc.

There's Texinfo, which is TeX but not LaTeX.
