Can you reccomend me a GUI tool or tools that I can use to create a NHibernate mapping file with relevant POCOS ?

You should try NHibernate Mapping Generator. It contains options to generate xml, fluent, and castle active record mappings. I have not personally tested all these but the fluent mappings it generated seemed pretty good. It looks like it will also generate them in C# or VB.

Also take a look at the first 2 links in this search. They are pretty helpful too.
