I'm working on my thesis now. It is about video converter. Is it possible to do it on java? What's ffmpeg? and codec?

Java is not very well suited for video work because of lacking support. There are however lots of work in development. You should google around for Java Media Framework. ffmpeg is a video converter, there is a Java binding for it as well as a partial port.
