I would like to create a iPhone application to connect to MSCRM (Microsoft customer relation management). I need to submit some data from my iPhone to the MSCRM in text format. How can I implement that? Or what all are the things should I keep in mind when creating such an application. Please share your thoughts.

Microsoft Dynamics CRM 2011 has a well-documented set of web service APIs - both SOAP and REST/oData are available.

There's a number of third-party products on the market to provide great iPhone access to MSCRM which may well do what you want to do without the need to write code: CWR Mobility is one of the big ones, www.cwrmobility.nl (now provided by Microsoft directly for MS CRM Online).
