To support storing dictionary using localStorage, I am using JSON to stringify the dict:

Storage.prototype.setDict = function(key, value) {
    this.setItem(key, JSON.stringify(value));
}
Storage.prototype.getDict = function(key) {
    var value = this.getItem(key);
    return value && JSON.parse(value);
};

Now I need to delete a item in this dictionary, how to this without delete the old value and set a new one, which is only an item deleted?

You need to retrieve the dictionary, remove the item and replace the dictionary in the localStore as in the answer RC pointed to.
