I am interested in a multiplatform licensing system to protect a software distribution. I imagine it would need a licensing server that manage licenses for users to let them revoke, buy more licenses, etc.

The key is that I need one with a client side library to interact with the server transparently to let me focus on my product not in the licensing system, or not too much. The software is developed with Mono and .NET.

I am looking at Manco, Infralution, Software License Manager, IntelliLock, InstallKey, Smart Licensing etc.

But I am wondering which licensing system do Monotouch and Monodroid use, if any or do they develop her own system.

Do you know other one that works in Mono and .NET?

CryptoLicensing for .Net supports a variety of frameworks include Mon, Mono For Android and MonoTouch (in addition to CF, WinPhone 7, SilverLight, etc).

You can give Portable.Licensing a try. It is an open source (MIT/X11 License) cross platform licensing solution targeting nearly every .NET/Mono profile including Silverlight, Windows Phone, Windows Store App, MonoTouch, Mono for Android and XBox 360.
