I have an excel workbook that has more than 20 pages, each has a plenty amount of data.

Every time I close the workbook, and then open it, I find all cell's types to be set to dates, which causes all formats to be repeated (that's 2 hours of work!!).

Any idea why this is happening and how to avoid it?

Change the format of the cells and double click in one of the cells. Repeat this in all sheets. Open and close excel file and see whether the cells double clicked retains the format that you gave.
