For the apple app store, does changing the availability date on an app submission reset the approval process for an app that's already under review?

No. Apps will march steadily through the queue until under review or rejected. You can change any of the metadata associated with the app prior to the app entering review, but not once it has entered review (as metadata is reviewed along with the app itself). Availability date and price aren't considered as the same metadata, however, and so changing them can be done at any time without spurring a review. |

I believe the only impact you can have on the review process is rejecting the binary. The rest is just metadata tied with the application, not the actual binary under review. |
