obviously there's no real answer to this situation. whatever technical documentation you choose, you're going to have to dig into the system and figure it out. IMHO, and I'm not trying to be a smart ass here, the most important piece of documentation in this case is "how things got to be the way they are"are"- an organization politics/resources roadmap review of the conditions that led to the "no documentation and project is being transferred to another team" situation.
