Removing tags from HTML message and adding a few line breaks are definitely good enough for text version, you just have to set the Content-Type: for the part properly.

I only suggest them because it isn't the emails that are difficult, I would say it's the maintenance of the SMTP server, ensuring emails get delivered, and harvesting all the good information you might need. But power to you, good sir/madam!

They're a competitor, but Mailgun might do the trick here. They will allow you to receive emails to a central mailbox and parse them for whatever you need.

Hey Angela, just wanted to let you guys know that with the help of one of our customers, we have been able to add integration instructions for Devise with Postage on our documentation. You can find it here: help.postageapp.com/kb/quick-start-guides/ruby (At the bottom of the page) He has also told us that he is updating the code to work with the newer, modularized version of Devise, and he will give us the code as soon as it is ready.
