comment mail() works while mb_send_mail() does not in multi-byte environment
After further research, I would concur with @tntu that the best thing to do is to simply keep on using the mail() function. As long as UTF-8 is set as the charset in the email's header, everything works fine.

comment mail() works while mb_send_mail() does not in multi-byte environment
I noticed in the documentation that contrary to mail() which expects multiple extra headers to be separated by "\r\n", mb_send_mail() expects "\n". I modified my code accordingly, but it didn't solve the problem.

comment mb_stripos returns incorrect value
@Laxus, it's embarrassing, but that's all it was, I had forgotten to save the file itself in UTF-8 encoding. If you want to submit this as an answer, I'll mark is correct.
