For webservice call usually these methods are used Ext.data.Request, Ext.data.JsonP, Ext.Ajax.request

If you are not using back end webservice no webserver is needed to run sencha app. It's just javascript. Try making apk from any sample project and run it in mobile.

Actually those 100 variables are already array. I changed them in my question for simplicity. I need to replace some data in them dynamically.
