Using the body-parser middleware and a copy/paste of your html except for adding name="checkbox" to the checkbox input let me see req.body.checkbox on the server after posting. If the box is checked, the value is 'on'. If it's unchecked, there is no property sent.

Flexibility, mostly. Commandline flags can be used to set grunt.option values, in addition to being able to set them from within other tasks. Setting the template to just the value of foo, you can execute grunt task --foo=bar and run with that as foo's definition.
