First, refer spockframework docs on how to mock objects. Second, once you are able to mock the service class it should be easy to mock the method async the way you want it to behave. Third, assign that mocked service class object to your main service under test.

Can you exactly add the full implementation of the above logic from the service class? render is used in controller not in service classes in general. Did not get about the validation statement. Also try if you see any errors if you try user.save(flush: true, failOnError: true).

All appenders inherit from root by default. In this case, usageAppender will only log errors in the file. In order to log that particular info level log for the service class, you would have to specify the log level as info additivity: false usageAppender: "grails.app.services.com.onetract.onetract.UserService" so that it won't inherit from the root anymore.
