Your input fields, <input id="email-address-input" name="website-email" type="text" placeholder="Your email here" class="order-form-input" /><br /> The name attribute ( name="website-email" ), if you change this to ( name="email" ) in your PHP code, $_POST['email'] will successfully register. Otherwise it would need to be $_POST['website-email']

An interval is the right approach for a poll, but not a very good solution. Since you have a Node backend, you could setup WebSockets easily that will communicate efficiently with your client. Have a look at socket.io

Do you use Google Chrome / Firefox? Check your Network panel to see if the request fires, if so, check the method type, and the request params attempting to be sent.

Ah, I have discovered the error of my ways. I was declaring the var AFTER the document.ready begins. If I place it BEFORE, it works fine. I should really head back to school ! Thank you for your help !

Thank you for the answer. The idea was I would pull in a string, like, the id of an element such as 'mob', and their would be a variable also called 'mob'. What I wished was to target the variable with the string using the method above.
