You profile, CoatedFOGRA27.icc, is indeed located in the directory where you execute your shell command? Otherwise, it must be in one of Ghostscript's default search paths, as reported by gs -h.

If you cannot provide (a link to the) sample PDF "because its a secure document with personal information", and if this question is important to you, then you surely can create a dummy PDF which matches your original one in structure and content type? (Also, you didn't respond to my question about the GS and IM versions you were testing with...)
