Any hook you set on your process is not copied due to copy-on-write functionality. To hook code globally, you need to insert yourself globally.

Do you have access to the PDB files of the executables? If so, you can query the PDB files and get function addresses.

The changes between say, PowerPC and X86 are confined to relatively small portions of the code, I doubt you would find yourself having trouble navigating the source of modern OSX if you throughly understand prior versions.
