Agreed that wcf is overtly complex for creating rest-style applications. The problem wcf tries to solve is making services exposable on different protocols (tcp, msmq and http) and rest is by nature tied to http. So you could argue that wcf is the wrong choice for implementing rest services.

I would usually create a view model for each animal in the controller. You could use this approach and let the controller assign a partial view name to each animal type. (or let the interface define the view name but this would break the separation between model and view logic)

Check out covering indexes. Thus is not directly answer you question but a covering index contains additional fields and can provide information without reading rows from the table. At a storage penalty of course.
