Cellwise multiplication by a True/False matrix (x2) results in a matrix that has same dimension as original matrix x, with all values of the original matrix that meet the "outlier" criteria. You could use this function by running outliers <- myfun(x=yourmatrix, zs=yourz) where your represents whatever input values you want to use.

I know that plot method for SpatialPolygons-class takes border as an argument... but when I try it your way with the map function, I get "border" is not a graphical parameter error. Why is that?

I was afraid I didn't answer your question using the desired function: map doesnt seem to allow changing of the boundary lines color, and although you could conceivably dissolve a world polygon and morph it to the "geographical database" format that map requires, it's not the easy way...

I added maptools and rgdal to the library requirements, and added a step to mask out the land from the final raster (set all the land to NA)

I think I have not understood the question still. When you say "not going through a coastline" does it mean the path have to be entirely in the water (outside the polygon) or entirely on the land (inside the polygon)? Also, is this a vector or grid data? If you could post the code you used to make that image, that would be helpful.
