I know and have worked with Plone installations containing both upwards of one million documents and over 100GB. Though those tend to be quite heavily customized sites with a dedicated cluster of machines to run it. The practical limit is usually on the active working set of data, and not so much on a potential long tail archive of rarely to never accessed data.

If you want custom uninstall behavior, you need to create an Extensions/Install.py in your package and provide an uninstall method. Doing so will prevent any of the standard uninstall logic to be skipped.

The name of a utility is a technical id, it's not a title. And a utility doesn't know under which name it got registered, like any object instance doesn't know what variable name it got assigned to. This is separation of concerns.

The persistent error sounds like you are using componentregistry.xml file but use a class that doesn't inherit from persistent.Persistent. Either use persistent utilities via componentregistry.xml and add the proper base class, or use global utilities via ZCML files and don't have the persistent base class.

comment Plone 4.1rc3 installation fails on Mac OS X Lion
I'm not aware of anyone having tried to run Plone on OS X Lion yet. It's likely there's a number of changes to compilation settings that need to be adjusted for it to run. I'm not even sure if the official Python can be built on it or if only the patched copy Apple ships runs.
