I tried to reproduce what you did. I stripped out the kinect-specific code, controlling the paddle with mouseX and mouseY instead. I do notice a delay. I guess I have a slow computer. (I'm also using Processing 2.0.1, 32 bit).

If you see weird chars, try changing xbee.begin(57600) to xbee.begin(9600). Also, try changing Serial.write(xbee.read()) to Serial.print(xbee.read()).
