Is there a way to see a list of all projects I'm watching and maybe unwatch some in bulk?

It's not obvious, but you can click on the dot to the right of GitHub logo in the upper right. Then you can click on the "Watched Repositories" tab. That takes you to the same link that @nulltoken shared - https://github.com/watching. github notification link
