I understand the importance of Sitemap for a website from the SEO perspective. However, since mine is a mobile website, I have very limited real estate. Also, I do not want to spend engineering efforts in building the site map UI etc. Hence, I wanted to know if having a visible link to Sitemap is absolutely necessary or can it just be there (behind the scenes) and google's crawler / spider should do it's job?

You don't have to make the link to your sitemap visible. Moreover, you don't have to link to the sitemap from your site at all: you just need to submit the sitemap to your Google Webmaster Tools account.
