I've built a WP plugin that adds a custom API endpoint that returns WooCommerce products...

The value for "total_found" in the body is correct but as you can see I've tried to send the 'X-WP-Total' as per the standard WP API, however when I run

$ curl -I https://example.com/wp-json/custom/v1/product

I just get the standard headers:

Side note, standard API works OK, so it is something I'm doing wrong not a general config issue:
